Time is flying, I can’t believe it’s already been an entire year of writing this newsletter! Thank you for tuning in each week and reading up on my cheesy musings. I’m so grateful for this lil’ community we’ve built. I’d love to know what you want to see more of — recipes, step-by-steps, lifestyle, home updates, pairings, travel guides, etc? Drop a line in the comments below, feedback is always appreciated :)
I’ve been driving back and forth between Brooklyn and upstate NY a decent amount recently, dealing with the mundane tasks like setting up internet and finding someone to mow my lawn (a yard is a surprisingly a lot of responsibility.) I stayed the night at the new place last week for the first time which was exciting, and the next day I went on a long walk down a trail through a meadow. Being in nature makes me calm and present, I love that I'm at a stage in life where a walk in the woods excites me more than a New York Fashion Week event.
I still have no furniture, but that’ll be changing soon! However, I did a big Target shop recently and found some gems:
Floral Sheets - I’m in my era of collecting floral sheets for the farmhouse feel. Love these ones, super comfortable and the pattern is great!
Green Floral Sheets - These are a bit cheaper but still so cute.
Wooden Stool - Found this for my bathroom, I was thinking of putting a candle or plant on it next to the bath tub!
Sage Green Plaid Pillow - Placed this on my bay window for now, but might add it to the master bedroom once I figure out my color palette.
Outdoor String Lights - A must have!
Towels - Always good to have extra towels in the home, and I was overdue for some new ones.
New & Noteworthy
Here are some of my favorite viral cheesy moments and upcoming events not to miss!
Savory S’mores: I love this trend and will 100% try it out when I set up my fire pit! Instead of roasting marshmallows, roast cheese over the fire and make a savory bite.
That Cheese Class - Hudson Valley: Tickets are going fast for our Fall events! Tap the link for more details.
Taylor Swift Eras as Cheese Pairings: I had too much fun with these.
Cheddar + Apple Crostini
One of my favorite simple appetizers is a melted cheddar and apple crostini. In this recipe, I sautéed the apples in maple syrup and added some seasoning and vanilla for a bit of autumnal spice. Recipe below!
SUPPLIES
2 large gala or honeycrisp apples, cored and cut into ⅛” slices
1 tbsp salted butter
1 tbsp maple syrup
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp kosher salt
1/4 tsp ground nutmeg
1/4 tsp ground cardamom
1 large french baguette, sliced ½ inch thick
1 tbsp extra-virgin olive oil
3 ounces sharp cheddar cheese, sliced thin
1 tsp fresh rosemary, finely chopped
Directions
Heat oven to 350ºF with a rack in the center position.
In a medium cast iron or nonstick skillet set over medium heat, add apples and butter. Using a spatula or wooden spoon, stirring occasionally until the apples become slightly softened, about 5 minutes.
Add maple syrup, vanilla, cinnamon, nutmeg, cardamom, and salt. Mix to combine and cook for an additional 3 to 5 minutes, stirring occasionally, until the apples are tender. Remove from the heat.
Meanwhile brush the baguette slices with olive oil and arrange on a baking tray in an even layer. Bake for 7 to 9 minutes or until golden and crispy.
Remove the crostini from the oven and top each slice with cooked apple slices and a thin slice of cheddar. Return to oven and broil on high for 1-2 minutes until the cheese is melted.
Garnish with rosemary and serve immediately.
