Winter is here in the Northeast. I’ve finally been able to spend some consecutive days alone upstate this week which has been rejuvenating. Finally got a coffee table and pillows for the living room, also added in some festive flair with a fake Christmas tree and little holiday accents. On Thursday, I woke up to SNOW. I feel like I haven’t seen this much snow in years? Safe to say I ordered a shovel ahead of time and got to work on the driveway, which I actually found to be a quite peaceful workout. Remind me that I said that after this winter. Anyways, now for a cozy recipe.


BAKED BRIE WEEK

Welcome to Baked Brie week! This week I’ll be sharing my favorite gooey, decadent brie recipes leading up to the holidays. Brie is a cow’s milk cheese with a mild and buttery flavor, making it a great base for countless sweet and savory pairings. Here are two recipes to showcase its versatility!

RECIPE: BRIE + CHERRY PUFF PASTRY BITES

This simple, fancy bite is the perfect little dish to serve at your holiday parties. The sour cherry jam is a nice sweet contrast to the creamy brie, all wrapped up in a crispy, buttery, flaky crust. Top with fresh thyme for a pop of herbaceous notes and you have yourself an easy festive treat! Video tutorial here.

Ingredients
Makes 8
- 1 wheel of brie, cubed
- 1 sheet of puff pastry, thawed to room temperature and cut into squares
- 3 oz sour cherry jam
- 2 sprigs of fresh thyme, for garnish


Instructions
1. Preheat the oven to 375°F
2. Cut the brie into small cubes, and slice the puff pastry into squares large enough to fold
around the brie. Wrap each brie cube with a puff pastry and place into a large muffin tin.
3. Top each pastry with a dollop of sour cherry jam.
4. Bake for 15–20 minutes, or until the puff pastry is golden brown and the cheese is melted.
5. Remove from the oven and let cool slightly. Garnish with fresh thyme leaves before serving.


RECIPE: BAKED BRIE PUFF PASTRY PINWHEELS

This is a delicious creamy, zesty and buttery combo that makes the perfect pairing to a dirty martini! Enjoy for the holidays or a fun New Year’s app. Video tutorial here.

Ingredients
Makes 12
- 1 sheet of puff pastry, thawed to room temperature
- 4 oz brie (cut into cubes with the rind removed)
- 2 tbsp grainy mustard
- ¼ cup of chopped castelvetrano olives
- ¼ cup of chopped roasted red peppers
- Rosemary to garnish


Instructions
1. Heat oven to 400F
2. Roll out the puff pastry and cover with a thin layer of grainy mustard
3. Scatter brie, olives and peppers on to the puff pastry until evenly distributed
4. Roll from the shorter end until the dough becomes a log shape, and slice into 12 even pinwheels
5. Evenly place on a cookie tray and bake for 12-15 minutes until golden brown
6. Top with rosemary and enjoy!
